Tyler Durden is obviously Te, Ni and Se. No Ne whatsoever coming outta him.
They do have Ni, but as you said it's their inferior function so it is very (the most) draining for them - Se dom's just don't have the energy to push forward with change/creation/destruction of society or systems like Ni doms (Ni doms have Ni as there lead and most stimulating function).
J is not equal to predictability - especially in dominant Ni's.

Marla I'm not so sure about. I thought she was supposed to be an INFP. I thought she was an Fi manipulative type, so I'd agree about the P. Maybe she's even an ENFP.
Tyler uses Fe like an Fe user, so I don't think he's an ESFP. He certainly uses a lot of Se and Ni. But in watching him in the beginning, when he first talks to the narrator, I get a sense that he uses Fe in his top two. That whole conversation was like like listening to two Ni/Fe users talk about their original ideologies (Ni) about people and society (Fe). I could be projecting though.
I didn't get any read of cognitive functions from Marla either. I think the actress, Carter, is an Fe user though, so perhaps the character is supposed to use it. And she does seem to use Fe in the meetings. Maybe she was the female mirror image of the narrator, INFJ. One thing I feel strongly is that she's an NF.Fe is much more manipulative than Fi ^v^
I could see any clear cognitive functions from Marla, so you could be right.
