Spain -travel tips, restaurants, historical buildings, beaches, etc...

Does anyone live in Spain, or traveled there? I'm planning a heritage tour to Spain, & have some cities in mind, that I'd like to visit. I will for sure be going to Madrid, & Barcelona. I'm trying to decide whether or not, to rent a car, use public transportation, or Uber. It will by a 2 week trip, trying to get as much in, as possible. I will be researching on TripAdvisor too, & posting any helpful links I find. I want to visit historic cites, castles, & at least one beach.

I'm debating if I should go to Gibraltar, or not. It looks beautiful there, but sometimes places are overrated, hence I don't know if it's worth the extra effort to see it.

Some other cities under consideration are: Granada, Seville, Murcia, Toledo, Zaragoza, Zamora, & Bilbao. Any suggestions? Is there a must see, among these?

Edit: I don't necessarily need to experience, "running with the bulls".
I'm more into adventure, than danger.

I could easily spend two weeks in Barcelona & Madrid alone, or actually in either one. If I were to add a third place to that, I'd take a train to Seville. Or a domestic flight to Mallorca or Ibiza.

What time of year are you travelling?

I haven't decided yet, probably before the busy summer season, maybe around May. Have you been before? Any suggestions, on the time of year that would be best?

I love Spain, I tend to go there at least once a year. Just came from Madrid actually, had a girls' weekend there. :)

I think that May might just be the perfect time to go. For instance Madrid gets almost intolerably hot in the summer, as there is no sea breeze to cool you down, but I don't think that it's going to be a problem in May. And can get cold in the winter.

To me, Barcelona is great all year long. Of course in the winter you'll need a coat, but I don't mind. I've already booked another trip there for February.
